Wild Pacific Halibut with Goodly Tomato Coconut Soup

Chef’s Note:
An easy, economical and delicious way to enjoy wild Pacific halibut!
1 - 500 mL container Goodly Tomato Coconut Soup
1/4 cup - water
1 cup - small cauliflower florets
1 - medium tomato, cut into 8 wedges
1 cup - spinach leaves, packed
1 - 8 oz Wild Pacific Halibut fillet, cut into 1-inch cubes
salt and cayenne pepper
cilantro for garnish, if desired
hot cooked white rice, if desired
DIRECTIONS
Place the soup in a small pot. Stir in the water and bring to a boil. Add cauliflower, cover, turn to a simmer and cook for 3 minutes.
Stir in the spinach and Wild Pacific Halibut, cover and simmer for 3 to 4 minutes until the halibut is firm.
Stir in the tomato and heat through.
Season to taste with the salt and cayenne. Garnish and serve immediately with rice if desired.
